Wisconsin Dairy 101
A field guide to the state's dairy economy, for a kitchen. Four things to know before you read the map: what it is, what is squeezing it, what is growing, and what a restaurant can do about it.
01
The basics
Wisconsin's dairy economy comes from cheese.
4,991
dairy farms, down from 167,000 in 1930. About 260 cows each.
1 in 4
pounds of American cheese is made here.
90%
of the state's milk becomes cheese.
$52.8B
a year for the state, and 120,700 jobs.
Farms are paid by what the milk turns into. Wisconsin makes cheese, so it gets the cheese price, and in 2026 that was the low one. Farms are also now paid for the fat and protein in the milk, so the cream is getting richer, past 4.3 percent fat.
Cheese milk$15.80
Butter milk$18.90
Per 100 pounds of milk, 2026 forecast
02
What is squeezing farms
Four pressures, all real in 2026.
Milk sells for less than it costs to make.
Sells for$19.90
Costs$20+
Per 100 pounds of milk, 2026
The mid-size farm is the one disappearing.Small farms have loyal buyers. Big farms have volume. The 260-cow farm in the middle has neither.
Farms cannot find enough workers.7 in 10 are immigrants. Enforcement is up, and there is no dairy visa yet.
Farmland costs $7,238 an acre.

2025+70%
Data centers want the same land.
03
What is growing
The growth in the dairy industry is cultured products.
Butter and cottage cheese.Butter is at a fifty-year high, 6.8 pounds a person. Cottage cheese is up from 1.9 to 2.4, and two Wisconsin plants are being rebuilt for it.
Mexican-style cheese. The state's biggest specialty category, growing 16 percent a year. A new plant is going up in Jefferson.
Cheese sold abroad.Record exports three years running, up 24 percent this year. Mexico is the biggest buyer.
Whey.Every pound of cheese leaves nine pounds of whey. It is becoming protein powder, and in Mosinee, vodka and gin.
04
What a kitchen can do
The farms with the best stories are the ones being squeezed. A restaurant helps keep them open.
On the menu
Ask for the fat and protein numbers. Richer milk sets, whips and browns differently. Treat it like a new ingredient.
Make something cultured. House cottage cheese, labneh, cultured butter. The demand is there and no restaurant owns it.
Follow the Mexican thread. Mexican-style cheese is the state's fastest-growing kind. Wisconsin Oaxaca beside the Limburger.
Put whey on the bar. One Wisconsin distillery makes vodka and gin from cheese whey. A whey brine or soda does the same job in the kitchen.
How a dish supports a farm
Buy from a mid-size farm every week. A regular order is what keeps a 260-cow farm going when milk prices are low.
Build the dish around one farm, not a category. "Butter from one herd" means more than "local butter," to the guest and to the farm.
Take the whole range from one maker. The young cheese, the aged one, the curds, the whey. It is the steadiest money a small plant sees.
Put the farm's name on the menu. That is marketing a small farm cannot afford to buy. The map shows who is who.
